Esashi’s New Specialty “Herring Oyako Sandwich”

Chef Keisuke Fujiya of the French restaurant “maison FUJIYA Hakodate,” who is a native of Esashi, has created an innovative sandwich using the town’s signature herring.

The “Herring Oyako Sandwich” pairs sweetly simmered herring, prepared in Esashi’s traditional kanroni style, with crunchy kazunoko (herring roe). This exquisite combination is elevated by a creamy white sauce reminiscent of “kuki” (the phenomenon by herring sperm), with a bold, sweet-and-spicy flavor profile enhanced by pickled ginger and mustard. Chef Fujiya’s culinary expertise brings a modern French twist to this traditional Esashi staple.

What is Kuki?

Kuki is a natural phenomenon where vast schools of herring swarm the coast to spawn, turning the sea milky white from the release of milt.
